Every time I go to Ruby Tuesday, I need the broccoli salad on the buffet. It’s a cold salad with a creamy dressing, cheese, red onion and bacon pieces. It’s my favorite, and I can easily eat half a pound in one sitting.
So of course, I had to make my own version that shaves down some of the saturated fats and adds a bit of protein from healthier sources (turkey bacon and Greek Yogurt). It’s a big hit a parties, pot lucks and Friendsgiving!
Healthy Broccoli Salad
2 heads broccoli florets only –cut into bite-size pieces
1 cup minced red onion
½ cup plain greek yogurt
½ cup mayo
4 tbsp champagne vinegar
1/3 cup boiling water
2 tbsp sugar
1 cup turkey bacon cooked crispy and crumbled
¾ cup finely shredded cheddar cheese
Place broccoli in a large bowl. In separate smaller bowl, dissolve sugar into boiling water. Pour water mixture over broccoli and toss very well. This will soften the broccoli.
In separate bowl, mix red onion, greek yogurt, mayo, champagne vinegar, turkey bacon crumbles and finely shredded cheese.
Add dressing mixture to broccoli and toss well, coating the broccoli evenly.
Cover and chill for 6-8 hours or more if possible. I kept mine overnight and the dressing was really soaked in. Bonus that we can make it the day before which makes it even more convenient!
Serve cold and enjoy!
