Healthy Summertime Honey Lime Mint Fruit Salad

It’s the worst when you spend your precious time peeling, cutting and coring beautiful fruits, only to have them brown and shrivel by the time you are ready to serve.  Adding citrus, specifically Vitamin C, can help keep your fruit salad looking fresh, vibrant and tasting great!   Here is a yummy recipe I will also be posting on my Pinterest page, so be sure to follow me for some new ideas and recipes!

Summertime Honey Lime Mint Fruit Salad
Toss this dressing with your favorite fresh fruits to keep your fruit salad sweet and looking bright! (the citrus in the dressing keeps the fruit from browning)  This amount of dressing is intended for 8-10 servings of fruit salad.
juice of one lime – may need two if small limes
juice of one lemon
zest of one lime
2 tbsp honey
1/4 cup roughly chopped fresh mint
Directions: Rinse and mix your favorite chopped fruits in a large bowl.
In a smaller bowl, whisk together above ingredients.
Drizzle dressing into fruit salad and toss until fruit is coated.
Refrigerate for at least an hour and toss again before serving. Serve cold.
